Ingredients
- 200 g fresh caterpillar
- 2 tomatoes
- 3 onions
- 1 carrot
- 1 yuka (also called manioc or tapioca) can be replaced by 2 potatoes
- 4 pinches salt
- 2 pinches black pepper
- 2 pinches nutmeg

Instructions
- Start by thoroughly washing the caterpillars
- After checking that caterpillars are clean and free of hairs, boil salt water in a saucepan and put them inside
- Cover the pan and let it cook over low heat for 10 minutes
- Cut separately the carrots, onions, tomatoes and yucas in small cubes
- Add the yucas and the onions and let it cook for 10 minutes more
- Then, add the carrots, tomatoes, and spices (salt, pepper, nutmeg), and let it cook for 5 minutes.
- Your caterpillar broth is ready ! Serve it in a soup plate and taste the caterpillars alone or with rice, bread, pastas… Enjoy !
Recipe Notes
The washing step is really important, especially to take off hairs which could be allergen for some persons.
This recipe can be adapted according to tastes and imagination of each one, adding for example vegetables of your choice (cabbage, broccoli, parsnip, parsley, leek… ) and you favorite spices like curry, coconut, coriander…
