The delicious escamoles tacos
The escamoles, also known as ants’eggs, are a delicacy of Mexico. With this easy recipe, you will discover all the culinary wealth of these insects, called caviar of Mexico !
Instructions
First, slice thinly one half of garlic clove and one half of onion.
In a frying pan, melt the butter over low heat.
Add the escamoles, garlic, onion and salt to the frying pan. Let cook for 5 min taking care of frequently stirring to prevent eggs from burning.
Turn off the heat and spread the preparation between the 4 tacos.
Close the tacos and plant a toothpick to prevent it from opening.
That’s ready! Enjoy with vegetables, a soup or anything else! Mexican people love it with guacamole !
Recipe Notes
Tips: Ants’eggs have a very delicate flavor and special texture. Therefore, better not to mix them with paste or strong spices which could mask their flavor and texture.
